Take the time to master the doctrine of dressings and your salads will stand out.

An experienced cook knows that the success of a meal comes down to making sure of two main things: fresh ingredients and precisely flavored dressing. Salad dressing may seem a minor detail in a meal to some of you, but it has been my experience that a good vinaigrette is what makes all the difference. The doctrine of dressings is not a complicated one. You have to stick to a few simple principles, exercise some judgment, and then indulge in a little inspired seasoning, which is what puts the stamp of your personal taste on it.
Vinaigrette dressing is used to season a large range of salads, from a classic lettuce salad, through salads with nuts and fresh fruit, vegetable salads, Asian salads containing noodles, meat and chicken, all the way to salads of cooked or grilled vegetables….
